I think it would be very weird to see edo Rin,mostly because of age.That love triangle would be kinda sick.30year old Obito loves 14year old Rin (pedo-bear situation) and 14year old Rin friendzoned pedo and loves 30year old kakashi.It just sounds wrong.I don't think Kishi wants to pass such messages to children.
It's very likely that Kabuto didn't know Rin's backstory.

Madara was old too but was brought back at young Age.

Madara was just revived in his prime,in a state that he passed through his life.How can Rin be revived older?Even if she gets into a 30year old body (I doubt that that can be done though) she will still be a 14year old girl in mind,spirit,experience etc.
