It's said they reanimated Madara had unlimited chakra. Does this mean all reanimated people had unlimited? And is unlimited infinite

Madara didn't need to use the Juubi then since he had more chakra than it

I believe all reanimated people chakra works in the same way. They don't have more chakra than they did when they were alive. Their bodies just instantly regenerates any chakra they use. Similar to how their bodies instantly heals any injuries.

He still suns out of chakra but unlike living people the chakra instantly regenerates hence why he says "unlimited". He wasn't referring to chakra pool.

It's not infinite but it's unlimited.

Ex: Itachi has enough Chakra to use susanno and so he can keep using susanno indefinitely, but he doesn't have enough Chakra to use, let's say, kirin, (not that he knows that jutsu) but if he did, he wouldn't be able to use it cause not enough Chakra to begin with.

Yes he did need to use the juubi.

Infinite tsukuyomi is a rinnesharingan jutsu, and you can only access the rinnesharingan's power by either becoming the 10 tails jinchuuriki or by eating a shinju fruit. It wasn't just a matter of amplifying his power and casting a normal genjutsu from his normal eyes.
