Edo and Not Edo

Sorry but what is the difference between Edo and Not Edo, people using it like Edo Madara, Edo Hashirama as if they're stronger when they're Edo please explain it to me.
Also is Itachi still Edo cause it was mentioned he broke out of the technique so yea..

edo = cannot die, which means no sickness, infinite stamina/chakra (i think), and itachi is still edo just not under kabutos control
