I really liked Unohana so i was kinda bummed when that happened. Back then in myopinion Soul Society 's rule was to punish any rule breakers. That was it

I agree with your assessmentWell Soul Society like all organisations obviously do bad things but only so they could gain more benefit, and SS gaining benefit means the world will be in balance. And to be honest I think there is really no good or bad in bleach, I like to think of what shunsui said in FKT " when a war starts both sides are wrong", Shunsui right now probably acknowledges that he is not a good guy but he will ensure that he wins so that he fights for what he deems a just cause. It Soul Society got what it deserved then the quincy will get what they deserve from the Shinigami in the next war because they killed the CC and destroyed SS..... if you see it like that it will never end.
But about Unohana I am thinking that she would not like to die by anyones sword but Zarakis. This is much more than just "powering up Zaraki" this is her cleansing herself of her sin by unlocking Zarakis true power. If Unohana died by the quincy she would not be content with how she dies. At least she died how she wanted to die, plus Isane is a very capable healer and they have Orihime as well whos healing capabilities are much better than Unohanas. Plus Im not even sure as to how Unohana would fight on the battlefield, Juha said they were bloodthirsty and use their subordinates just like Juha uses his now. And who knows Unohana may be a liability on the battle field and kill 1 quincy but in turn kill 10 'weak' shingami.
Plus i'm guessing healing wont be a priority in the next fight look at the quincy they didnt have healers they only had top notch fighters who had power and now Kyoraku just gave a huge power up to Zaraki, so much so that before this training was able to kill 3 SR now imagine how much damage he would cause. The next war will be one for keeps and I think Kyoraku plans on winning it as quickly and effectively as possible.
