Who is to say that the rinnegan is not the default dojutsu of the Juubi? the only thing we know for sure is that the tailed beasts can be control by a sharingan and while controlled has sharingan-like eyes... maybe the initial images of the Juubi has a sharingan-like eye because rikodou was controlling it with his 6-tomoe sharingan?

After you use izanagi doesn't it seal away the sharingan forever? His eye is still perfectly intact. My theory is that he had just finished his jutsu to absorb the ten tails before minato slashed him and then once he became its jinchuriki it healed him due to the regenerative powers of tailed beasts

Realistically speaking, it would've been asinine for Obito to cast izanagi. He would never throw away his eye.
When he used it against Konan, it was just one of his many extras.

Simply put, If Minato went after Obito's head instead of his torso, things might be different.
