I would say that Dark Souls is likely the more iconic of the two. Being the first entry in the series (not counting Demon Souls) the bosses have stood the test of time and are the most iconic/infamous out of any Souls game (Smough and Ornstein, Capra Demon, Four Kings, etc), and the enemy/level designs in general had a great blend of unique artistic style while never being overly repetitive or bland like in Dark Souls 2.
HOWEVER from a gameplay perspective (as these are after all, games) I really don't think there is any debate in saying that Dark Souls 3 is the best of the franchise. They took the feedback of Bloodborne's fast-paced combat and implemented it with the slower, block-hit-block combat of Dark Souls and Dark Souls 2. The result is the PERFECT balance of the two drastically different combat styles, offering a faster-paced combat system while still feeling very much like Dark Souls and not like Bloodborne. And while I do think Dark Souls is more iconic overall, that isn't to say that Dark Souls 3 doesn't offer its fair share of unique boss/enemy/level design. Never did I find the art-style bland or repetitive like Dark Souls 2, and if you count the two DLC expansions then Dark Souls 3 is very diverse in both scenery and enemy design. Beyond the pacing, Dark Souls 3 also had the benefit of YEARS of past experience to craft the best, finely tuned Souls game From Software has made yet. Everything just feels so natural and silky-smooth. And they definitely upped the difficulty in response to complaints about Dark Souls 2... and then upped it even MORE for the final DLC expansion they released—so it's no push over when it comes to the classic Dark Souls degree of challenge.
So basically my vote is for Dark Souls 3 being the better GAME while also recognizing that these games will never be as iconic as the original Dark Souls was.

There's honestly no point in buying a PS3. Japan has stopped producing them, which means they're going to cease production everywhere else real soon. The hardware is horribly outdated, and hasn't been supported in a very long time. Buy a PS4 slim (unless you either have, or are planning on obtaining a 4K TV in the near future—in that case, drop the extra $100 for a PS4 Pro). Buy Dark Souls 3 Game of the Year Edition. Buy Bloodborne. If you REALLY want to play the original Dark Souls then sign up for a free trial of PS Now, which is a streaming service for PS3 games (and some older generation titles) on PS4... it's not perfect, and in my opinion is horribly overpriced, but the free trial (a week) is plenty of time to experience the original Dark Souls without purchasing an entire console dedicated to a single game.This is true. Also, while nothing has been confirmed yet, there are rumors that From Software will either be remastering Demon Souls or porting the original Dark Souls to the PS4. So there's also that.
