When Spiral Zetsu attacked her, there is just one stake (Spiral Zetsu's wooden wand) stabbing her (in her stomach), the stake didn't even get her back yet and the chains were already breaking. You can see this right here:

Her jutsu faded away when the stakes went all through her body, piercing her from her stomach to her back:

Kushina, on the other hand, was exhausted because of the Bijuu extraction Tobi performed on her, and was running out of chakra, but this didn't stopped her from paralyzing the Kyuubi in seconds:

So let's analyse both situations:
Karin:
Status: In Perfetc Condition
Fighting a Huge monster that cannot be compared with the Kyuubi, and only broke some of it's hands and arms.
Her Jutsu breaks when she get any type of physical damage
Her jutsu fades away when the wounds are too severe
Kushina:
Status: She had had the Kyuubi extracted from her like two chapters ago, and her chakra was running out.
She wrapped and paralyzed the Kyuubi in seconds.
Her jutsu didn't even twinkle due to her pain. This means severe wounds, having her chakra drained, and being in the edge of life and death because of her Bijuu extraction, doesn't stop her technique.

3 in speed and showed us no shunshin feat, the only reason why spiral zetsu was able to hit her was because:

Highly false misconception. The Kages had been constantly trying to destroy the hands, but they kept on regenerating. Just like they will regenerate the hands Karin destroyed.. meaning she really had no feat superior to the Kages...

False, Hashirama had no reason to regenerate the statue.. he still had other hands remaining, that he could use if he wanted to, but he did not chose to use the buddha even then. So why would he bother with the regenerating. And sorry but you realize Buddha is Mokuton right?
Its like saying the Sharingan can't fix the susanoo once its broken..

Sakura is no speedster, but she is faster than people think she is, at the age of 16 she already is a level 3 out of 5 in speed, and she has some feats that back up the level Kishi assigned her:
Blitzing The Fourth Kazekage's Puppet:

Almost evading Sasori's poisoned chain, causing her a minor wound. (and you do know what happened after right?)

And taking Katsuyu's acid aside, Sakura has the feats to evade the chains, or just pull them and finish her in one shot.
Sakura also has sleeping-gas grenades, she can throw at long range with her CES and put Karin to sleep.
I don't care if Spriral Zetsu was too close or she was just focusing on the statue, she had the surprise factor on her side, yet she wasn't able to wrap and paralyze the Statue (Shinju Senju) nor Spiral Zetsu successfully, and you think that was fast? This is fast:

So Karin isn't fast at all, not even when she uses her chains. She wasn't able to redirect the chains towards Spiral Zetsu before he stabbed her.
