Could Katsuya beat Perfect Susanoo?

Susano'o needs to be controlled in order to destroy something otherwise if its just susano'o then katsuyu wins 0 difficulty

It can definitely survive PS but not sure if it can beat it. 100 Katsuya 's size dwarfs PS so the amounts of acid that it can produce can mostlikely melt PS.

No she can't damage PS at all.

However, if it's PS alone, I don't see how PS can damage Katsuyu either.

PS is more powerful and by a margin but her abilities prevent her from being killed that easily. Kinda like Kamui. Kamui isn't the most powerful ability but it still allows one to avoid damage no matter how powerful the attack is. Depending on certain attack.
