If people could put fanboyism down for a moment and being totally realistic about the battle then what do we have?

Itachi is more than capable of defeating DSM Kabuto, although it would NOT be as easy for him. Especially as he wouldnt have his brother as a wingman in that particular battle.

It can be argued that Itachi was fatally stabbed in that battle by kabuto (at the point that he cast the Infinite Loop) and because he was edo it did not kill him. So in another situation the question would then be if he would have allowed himself to get stabbed at all. And i highly doubt he would have. Itachi KNEW he was an edo so he knew where he could take advantage of that. He could have easily shielded the blow with some Susanoo armour.

Then again, without his edo form.. would he have had enough stamina to defeat kabuto in the battle?

Only one phrase comes to my mind: Itachi Solos.

Sorry but it still came to that.

This. His ability to breakdown stuff in battle is second to none, I'll argue anyone who says otherwise with feats. No Sasuke means no restraints either. People forget that.

Itachi would've been able to win regardless of being an Edo Tensei. People have to take into consideration how Itachi was merely fighting to capture rather than fighting to kill and was restricted on fulfilling certain requirements to use the only ability that could do so. The fact that Kabuto confirmed that Itachi could perfectly read Kabuto's attacks suggests it that Itachi could've won if he really tried.

Easily no, but if Itachi went in with the intent to kill Kabuto rather than capture i think he'd take him medium difficulty.
