Now when someone say the anime isn't canon I understand that but why I'm confused with is that when I read the mang here Itachi izanamis kabuto it was the same in the anime so how is it not canon

See the only difference in canon and filler is progress of story a episode which moves forward or progresses the story are called canons and those which take you "once upon a time" situation are fillers, you got it

Its hard to understand, but i guess because the anime add some fillers scenes??

Manga is canon. Anime follows canon. Anime is canon. Some things and filler are not canon.

Only filler and some other scenes aren't canon cause they didn't occur in the manga.

Only the fillers are not part of the original story , like the Sora , Guren , OP adventures on sea fillers .......people just made a habit saying anime is not canon lol.
