I have an explanation for Madara suddenly absorbing Amateratsu.
Hashi's DNA got fused with Madara's DNA, creating a completely new sequence, causing genetic changes throughout the entire body, not just the eyes.
His body was altered to the point where it posses new techs such as absorbing charkra. This charka tech is something that not even Hashi could do directly, nor something at Madara could previously do at VOTE, which implies the fusing of DNA to create a new sequence.
Perhaps he wasn't able to tap into it as an elderly person and Edo Tensei only allows you to use things that people were able to tap into while alive. Or perhaps being revived was the prerequisite to fully accessing these new genetic traits. Afterall the S06P deals with Samara, where new power is taped into via rebirth.
