Naruto and Minato were able to produce rasengans in bijuu form so it shouldn't be much of a stretch for susano'o to produce jutsus, when Madara pulled meteorites his susano'o also made hand seals so again... not much of a stretch

Wouldn't Chidori be harder to create through Susanoo's Tenketso? Enton is inherited from Sasuke's power, so the Chakra manipulation might require less than Chidor or its variation?

Unlikely to be the case. Sasuke can expel pure Enton with his Susano here [

]. He didn't use his Amateratsu, yet was capable of manifesting Enton. More so, Chakra control is no problem, as Sasuke has shown to manifest massive amounts of Chidori through his based body prior to ever even receiving the MS [
