Was it ever mentioned or stated anywhere, the exact reason how this pairing together? I believe Ino mentioned something about this in the Sakura Novel.

If you look at the theme yin and yang it will actually make sense.
I believe there was a interview with Kishi about this pairing. He just paired Choji with anyone (happened to be Karui) just so he can continue the Ino-Shika-Cho formation.
And as for Chouji x Karui I think it fits their characters to get together.
Chouji and Karui have both been ridiculed in their lives. Karui for being flat chested, and Chouji for being fat, and they're very insecure about their respective physical traits. And they tend to go crazy should someone point it out.
So it seems given their issues with their physique, I would think they'd be 2 characters who would be less likely to be shallow in terms of looks and open to a relationship long as it was someone respectful they got along with. So Karui didn't dismiss Chouji for being fat and he didn't snub her for having a flat chest.
So I just think given how they can take stock in themselves as not being perfect, they don't expect a partner who is just HOT and perfect with no flaws.
When people are single, you always dream about what you want. But when you actually get out there, what you get may not have matched up to the vision you had.
Though I admit I wouldn't have minded Kiba x Karui. But oh well.

Actually, I wasn't. I was indifferent to all pairings, and didn't care who ended up with whom. It was a passing thought at best. But I actually just read to see favorite characters at the time, and if they weren't around, I usually skipped stuff.
And I like Karui, but am not crazy about Chouji, so her ending up with him is not something I cared for. But once it happened, it's understandable given the manga, You work with what you have.

Kishi only paired them up. It's more like saying it works out anyway even the reason they got married is not covered. 10 years is a lot of time but the message is clear-- Konoha is now on friendly enough terms with Kumo to allow intermarriages between nins. That's the most important point. Otherwise they would be sending black ops to kill the defecting nin off.
Sometimes even saying less says a lot and last two chapters were quite condensed.
