How are chakra levels determined, we all know the senju, uzumaki have huge chakra pools while the uchiha have potent/sinester chakra. But how does it grow, as you grow stronger or just with age?

The way people use the term "chakra pool," can be mis-interpreted.

Madara has shown enough chakra to fight Hashirama to no chakra left at all.

I think physical energy/stamina is being confused with chakra in this base.

Senju clan members are born with high chakra levels, while Uchiha clan members seem to have a particular strong chakra.
As a shinobi gets older, his physical traits get weaker (eg: Old Hiruzen). Training is the most common way to achieve bigger/stronger chakra pool.
