SPEED
Minato and Itachi had a common encounter to test their speed on: Killer Bee. What we see is that the inexperienced Killer Bee countered Minato's Hiraishin not once, but twice. In contrast, Itachi's shunshin effectively caught Bee off guard not once, but twice. The second instance is supported by the viz translation, and the first instance clearly shows that Bee's awareness was preceded by Nagato's warning, and after a line of sight was re-established.
REFLEXES
Minato and Itachi had a common encounter to test their reflexes on: Naruto. What we see is that base Naruto effectively strikes Minato, bypassing his reaction to sudden stimuli. In contrast, Itachi reacted to several simultaneous strikes from the vastly powered up, shrouded Naruto, and even more notably, Itachi was already mid-air at the time, which was established to be a highly disadvantageous position for ninja to be in at the beginning of part two.

Minato and Itachi had a common encounter to test their field awareness on: Obito. Itachi, as a young child, was the only ninja capable of noticing the adult Obito's infiltration. Obito himself says Itachi was the only one to ever detect him. Minato, as an adult, was unable to notice the teen Obito's infiltration, which resulted in the death of Hiruzen's wife, dozens of guards, kidnapping of his family, and ultimately the death of his wife and himself.

Minato and Itachi each sealed portions of tailed beasts. Minato gave his life to seal half of Kurama. Itachi effortlessly sealed the combined force of Nagato and the absorbed Hachibi's chakra. In addition to this, Itachi had demonstrated sealing knowledge and skill involving the transference of trap eye techniques, which amazed Obito, whom admitted he did not fully understand how it was accomplished, unlike Minato's feats that Obito observed.
HYPE
Minato and Itachi have a common, knowledgeable denominator for hype: Obito. Itachi, as a young child, prevented Obito from touching Konoha. Obito reneging on this deal the moment he confirmed that Itachi was carrying out his own death proves Obito's apathy toward the sanctity of the promise, and his notable caution of Itachi. Minato, on the other hand, or Hiruzen for that matter, did not warrant Obito with such caution despite Minato and Hiruzen's alleged superior hype. The secondary instance of clashing hype is Orochimaru, whom refused to approach Itachi before invading Hiruzen's Konoha out of inferiority, even when he thought he possessed three [weakened!] Edo Hokage, including Minato, as summons.
PSYCHOLOGICAL STRENGTH
While a minor point, it should be observed how each man handled their most soul-crushing moment in life. Itachi, as a child, clenches his teeth and silently streams tears, whereas Minato raises his lower lip and tears up. One is how a warrior cries in the pits of his deepest despair. The other is how my wife cries when I tell her she looks fat in those pants.
JIRAIYA = ITACHI > MINATO & EVERYBODY ELSE
Itachi says he'd stalemate Jiriaya, no matter how many ninja were on either side.
Nagato says he'd never win without trickery (him not even being there.)
Minato straight-up says Jiraiya is a better ninja than him or anybody else back then (prime Hiruzen, Bee, etc.)
