If itachi has no intel on her strong willpower, he won't torture her more than Kakashi ( which was 72 hours ). I can see Tsunade handling this, due to her strong willpower and Senju DNA.

She could still continue fighting even after getting impaled through her abdomen with two Susanoo blades. Even after being cut in half, she was still able to survive the ordeal with Madara and maintain consciousness, summon Katsuyu, and survived long enough to heal the other Kage before being healed herself.
So can she survive a Tsukuyomi?

Yes why not. She has the best chakra control in the manga and the ability to heal mental damage.
Itachi fans should realize Itachi's famous quote: "every Jutsu has a weakness"

Personally I'm getting a feeling that the Senju have some natural defense to tsukuyomi. X_X. If not that Jiraiya hinted that he could break out of tsukuyomi or other genjutsu, Same can be said for Tsunade.

The Tsukuyomi is just a genjutsu. Even part1 fodder Kakashi survived it, he was able to talk after it.
