The way it was supposed to work is by using the sensation to reverse reality changes, forcing what was to remain. However, because this blinds Itachi's eye, he can only do this one time. If he did use izanami, he'd loose susanoo, and it would be a simple matter for the sage to use almighty push to make Itachi a splatter.

yes he definetly has a chance to beat rikudou sennin because, itachi is mangekyo user. no matter how strong the enemy is 1vs1 is a really tough to beat itachi, if almost impossible, its like climbing a mountain straightup without any backup gear, sure you can try it, but it doesnt mean you can accomplish it.
also rikudou sennin was a founder of ninja ninjutsu, meaning that he become a ninja at a pretty late age, compared to itachi and other modern ninjas, who were taugh since they were very little.
