Itachi can simply Amaterasu Minato's Kunai Spots, disabling his ability to teleport.

Just that alone gives Itachi a big enough advantage to easily win.

No. Minato has a counter to everything Itachi has while also being smarter, with more stamina and with the better jutsus.

Susanoo, Amaterasu and Tsukuyomi are all countered by sheer speed. If Itachi goes in CQC he dies.

If he sits inside Susanoo ( and he won't be able to do that much due to his low Stamina ) Minato can either wait it out, use clones to teleport the Susanoo away and kill Itachi in CQC or prep Frog Song and FTG around until it's ready.

Itachi can't win.

Minato can not make that many clones, like Naruto can. But I will admit that his Clones do give him plenty of options.

Assuming we are talking about Alive Itachi, His stamina is pretty average at best.

I think that Genjutsu, or Totsuka Blade is his best option. Only Gai is confirmed to be able to fully fight against a Sharingan of Itachi's level, one glimpse and it is over.

Firstly, which Minato are you talking about? Minato, KCM Minato or BM Minato? If you're talking about just Minato, then Itachi and Minato are even and anyone could win, it entirely depends on circumstances. Both have advantages and disadvantages over the other. But if you're talking about KCM Minato, then Minato easily wins. And BM Minato totally owns Itachi.
