Big objects are not a good match against Itachi's Totsuka blade. If you use a large object you only make it easier to seal it for Itachi, and let me tell you a humongous PS won't move so fast that it Can't be tracked by Itachi's sharingan and stabbed by his totsuka blade sealing it.

With making PS essentially useless Madara only has the choice to outlast Itachi, because there isn't anything that he can do which can get through his Yata mirror Susanoo. Also as far as we know, he doesn't have anything like oral rebirth, so all Itachi needs to do is use amaterasu on him and he is dead.
