I haven't seen anyone mention, but did I just see Sasuke use Byakugan? Then determine the eagles injuries?

No. He simply noticed that kaguya used the byakugan to hit the hawk's vital points.

The way they put it does make it look confusing. Maybe that eye does grant him all dojutsu but i don't know. There doesn't seem to be any veins popping up and that is even seen when Kaguya uses it. So either he was just stating it in bold because he knew what she used or she was saying it but was off panel

No Sasuke got Kaguya to use Her Byakugan on Him She hit the right places to disable Sasuke Bird Summon.
