Summoning jutsu is the art of a shinobi bringing forth an animal companion from another realm/place. This is done through the signing of a 'contract' binding the ninja to the animal and giving that shinobi the ability to summon their counterpart whenever need be (this is assumed, their may be stipulations in some contracts... no summoning during the hours of 6 and 8 on sundays, etc.).

In our world their exist summoning contracts with pretty much any type of animal you desire, although the main ones inside the canon narutoverse are Snake, Toad and Slug... Dog and Weasel being other known contracts.
