Do you know how many deep valleys we have on earth. Or how how deep the sea is.

Yeah I was often thinking the same thing. But possibly the Jubi's chakra/flesh didn't actually transform into the rocks, but it formed a layer [kind of like an oxide layer of titanium] around the moon.

I agree though I personally think he used CT to either create the moon from the Jubi, or he used the rocks from the earth.
