I'll start out by explaining the abilities of both shinobi

Sasori, being an Akatsuki, was an immensely powerful shinobi. At a young age he was shown to be a natural genius at puppetry, gaining the name Sasori of the Red Sand for himself. He defected from his village at the age of fifteen, killing the current leader of the village, the 3rd Kazekage, and turning him into a puppet.

Tsunade, being the granddaughter of Hashirama Senju, is an immensely powerful shinobi. At a young age, she was taught by Hiruzen Sarutobi, the third Hokage, along with Jiraiya and Orochimaru. Later on, this team would make a great reputation for themselves, gaining the name "the Three Legendary Sannin" for themselves. However, after the death of her brother and then her lover, Tsunade lost her confidence and went into a self-proclaimed exile, along with Shizune, a relative of her lover. However, after being inspired by Naruto, she returned to Konoha, taking the position of Hokage of the village.
-Physical Strength-
One of Tsunade's main traits is her immense physical strength, which allows her to easily rupture the ground itself with
-Chakra Reserves-
Tsunade, being a Senju, was born with immensely large chakra reserves, being able to use them to heal

Why we believe Sasori would win
Tsunade's fighting style revolves a lot around taking out the opponent with a single hit, which is certainly a good strategy against most opponents. However, Sasori is essentially just a bad match up for Tsunade. For example, the fact that Sasori has shown the ability to fly would alone be an immense problem for Tsunade, as she simply doesn't have a way to reach him. She may have immense strength, but if she can't get a hit off on the opponent, it's useless.
We've seen a lot of people state that Tsunade would simply heal up from Sasori's attacks, but however, they seem to be forgetting the fact that Sasori's weapons are all covered in poison. She won't be able to heal from that, as poison affects the cells themselves, paralyzing them, which would keep them from regenerating. Not to mention the fact that either way, if he stays in the air, she has no way to get to him. Even if she can heal from the damage of the poison, there is essentially nothing she can do but heal from the attacks Sasori will throw in her direction, ultimately draining her chakra.
The puppet of the Third Kazekage would also be a real problem for Tsunade. The Iron Sand Rain would be very hard to evade, especially if Sasori decides to use it repeatedly. Tsunade may have great evasive skills, but it's physically impossible to evade this kind of an attack forever.
Sasori's Performance of a Hundred Puppets will also be hard to survive. People tend to forget the fact that even if Sakura survived it, she had Chiyo's 10 master puppets alongside of her, which took care of most of the puppets by themselves. Without those, Sakura would have been overwhelmed without a doubt, and it would be the same for Tsunade.
Summary
We believe Tsunade would lose due to Sasori's flight countering her fighting style since neither she nor Katsuyu will get to hit him with an attack. Sasori's Iron Sand and Performance of Hundred will also ultimately overwhelm her, killing her in the end.
