Well the Sharingan is certainly the Uchiha's greatest tool. However, ninja tend to focus on other abilities if they can't use the one most natural/powerful for them. We associate them with using the Sharingan often because that's pretty much all we see. They're still supposed to be elites, so I'm sure they would strive in other areas although not as much as they would with a Sharingan...

Eg. When Onoki started losing the chakra to use Jinton, he used other doton jutsu that we wouldn't have seen if he could have just used jinton and thus we would think he couldn't. Now if they were born WITHOUT the sharingan, their whole fighting style would probably make a slight change.

Wouldn't be surprised if their Katons are Juubi sized due to Hashirama's cells.Get rid of that and their Katons are probably smaller and less destructive.

Sasuke has near instant speeds + kenjutsu + chidori variants.

Itachi has intellect + shuriken mastery + basic genjutsu.

Oh, I have an even better idea, why not remove every other characters main arsenal and have them battle an Uchiha 1v1?
