Samurai Champloo is one of a kind. I have yet to come across another anime that was so chill and blended in such music. Definitely a modern day classic
Cowboy Bebop is a different genre but kinda falls under chill with a nice soundtrack

yeah i totally agree. already saw cowboy bebop and it is a very awesome classic.

Kids on the Slope - written by Watanabe, animated by MAPPA/Tezuka. It's about jazz music, friendship, and a little bit of romance. It's a very, very solid anime.
Baccano! - It's about immortal mobsters during the Prohibition in the USA (watch it dubbed, obviously). The OST is amazing and so is the way that the story is told.
Those are the only two shows with an amazing OST that I can think of right now. I'm sure there are others I could think of that you'd like, though.

Like Chibi said, it's a one of a kind. Haven't seen one like it but the anime "K" is pretty chill to watch. Cool fights and the soundtrack is nice. Plus it's really short, only 13 episodes. The soundtrack reminded me of Samurai Champloo at times so you should give it a try.

FLCL is only six episodes. Great rock soundtrack and one of the funniest anime out there (dub is excellent, but it can go either way).
Space Dandy is the anti-Bebop, though it does have great animation and music most of the time. Absolutely hilarious and kinda like Champloo in that there's really no visible point to this journey the characters are on. lol (it goes either way, both languages have their strengths)
Mushishi is about as chill as you could possibly get, and the soundtrack displays that to the fullest. Might not be for you given the nature of the show, but it's in my Top 5 personally (I consider the dub superior, but it goes either way).

Try out Ping Pong the animation. As pertaining to plot, setting, and anything else, they are nothing a lot, however, Ping POng the animation incorporates a mood similar to Samurai Champloo did with it's music.
