Amaterasu is a concentrated attack. So normal Amaterasu users cannot defeat the Buddha so easily. Because the Buddha can easily separate out the burning part.
But if the user of Amaterasu is Sasuke who can manipulate the flames, Buddha is set on fire all over its body.

Once the eye is focused, Amaterasu burns very fast. But the thing is too large to get overwhelmed easily. Hashirama can simply discard the hands burning and proceed on with the attacks. Even if Sasuke continues doing it and by the end of the fight the whole statue is on fire, the amount of damage the remaining hands would do with constant attacks is too much.

A part of PS was mostly destroyed and Madara was completely out of chakra. Final Susano'o's defense is obviously on a lower tier. You do the math.
