I like her for her personality. She has actually genuinely cared for Naruto (and pretty much everyone) as human beings all of her life. She also doesn't put people down or underestimate people like many other characters (like Sakura, Ino, Neji, Sasuke, and others) have done throughout this entire series. This empathy comes from the abuse she experienced from her father as a child. Hinata really cares for other people.
Even in terms of the pairing stuff, she is the only non-shallow/stupid girl from the academy that didn't fan girl over Sasuke or superficial crap like physical appearance. She likes Naruto because of his drive to never give up and the encouragement he gives her. She is not like those slaves to lust (Sakura, Ino, Karin, etc...) that can't properly judge someone by the content of their character. Those stupid girls treated (and still do to some degree) every other guy that wasn't Sasuke like crap!
The difference between Hinata and those stupid other girls is this: Yes she likes Naruto, but does she go treating Kiba and Shino rudely because of that? No she does not!
Hinata is just an overall better person than a lot of these other characters.
Conclusion: It is not because of her power or appearance or relevance to the story. I like her simply because she is a kind caring girl whose attitude would not piss me off and make me wish that Naruto had unleashed Kurama upon them.
