From what I read it seems he's crushing on her after waking up and when they're off on their own separated from the other 3 it's during these interactions that he falls in love with her.

But they didn't have that much interaction that would spike it off just from that. The memories initiated it all.

I agree. But if you have enough experience, you learn what they want, when they want and how they want. Also, if you learn body language signs, you can know if they want it or not (from you), in let's say, 70-80% of the time.

I honestly think Jiryia should have been a women expert. He lived long enough to understand girls plus that's part of his research. Lol Also Kakashi should have taken off that mask and gotten married already. Lol He read the most Jiryia books.

Not much, yeah. Still, I bet many people, when they were kids, knew when someone liked them. Children before adolescence usually confess it in a straight-forward manner. Hinata did exactly that. At least, that was my experience.

He doesn't understand her feelings until he gets to see it from Hinata's point of view. IMO it was done like this to flesh out the backstory of her feelings for those that might want to watch the movie but don't know why Hinata is in love with him.

This is where I'd take Gray's fiction argument. She confessed to him in the main story and showed him her interest many times. But yeah, it's easier to sink it in when you actually see it through the eyes of the beholder.

Hmm, sure, I can agree to an extent. His frustrations were cured after the Pain arc. He beame a hero and he learned what it means to be valued. So even if he didn't understand Hinata's approach before, he could have after the accomplishment of being acknowledged by everyone. But he is too dense, as it appears.
