Anything that bleeds can theoretically be defeated by the two of them. The issue is how they would approach the fight. This is why they had to be separated and tricked, a tactic that required intelligence instead of outright strength (hence it being Shikamaru's main claim to fame).
If they use their typical strategy, it will have Hidan rushing the opponent to keep them busily distracted from trying not to get cut, meanwhile Kakuzu launches wide area elemental jutsu at them BOTH. Sakura would engage Hidan and may or may not shed a drop of blood, but would have to worry about Kakuzu's tricky threads and his beasts. This is difficult, and Katsuyu would offer really physical defence and distance, because her acid is avoidable. Katsuyu is not much of an 'engage' summon, and the two are experienced bijuu hunters.
If at any point Sakura loses a drop of blood, she would heal very quickly, but blood on the ground is as good as blood on the scythe. Any little bit still activates Hidan's curse. He could lick up some and have Kakuzu cover fire for him as he runs far enough away that he can enact his, what, 20 second long ritual. At this point he starts hurling profanities at Sakura from a distance, gives a sub par one liner, stabs himself in the mouth with the pike exiting his skull, and chokes on blood saying "this feels go~od", and watches as the back of Sakura's skull burts open in a spray of blood and brain tissue, killing her instantly.
That is, IF he can ever get a sample of her blood. Sakura wins if she can use Katsuyu to simply keep the two apart. At this point she had best punch Hidan in a way that eliminates his head, and then use a kairiki kick to punt it over the horizon (or have a small Katsuyu melt it with an acid shower. At this point its down to a physical fight between someone with five auto revives that loses access to a spell with each revive, and someone with a summon and auto regen.
