Well it's accurate, but the English translation still doesn't suit Itachi that well.
Nevertheless, it's very hard to translate from Japanese to English and keep the required nuances sometimes.
The wording Itachi used was 蛇博士 (hebi hakase) and yes, the word for word translation is snake doctor, but translating it as Dr. Snakes is a little of a push. It's not that much of a joking remark although it still has some humour in it. Besides, although 博士 (hakase) is also a word for doctor, it's more commonly used as professor, expert and for people who have a PhD on some subject.
