Well... Lightning typically strikes the ground if I am not mistaken. Perhaps Kishimoto envisioned that the earth was weak because it had no real defense against the strike itself other than to get hit. But I am not Kishi so I can't really confirm

This is actually accurate. Lightning never cuts too deep into solid earth, because it's just too thick and built. But against stuff like the one guard wall Kakashi uses with the dogs, and strong enough lightning strike can probably pierce it.

It can definitely pierce it.

Only tough minerals like granite cant be effectively damaged by lightning.

It's not about the density or quality of justu... But the various additional aspects attached to it because of being Senju Hashirama's jutsu... Hashirama was the greatest known user of element manipulation(Mokuton)
No matter how fast an attack is, how vast an attack is, how destructive an attack is...etc
Hashirama is able to manipulate the wood in any such way...
That's why Mokuton is greater than other elements...

But in case of Yamato, he couldn't do it so well...
