Why would the hearts have different chakra than his? He only takes the organ, it's not like he sucks the persons chakra out as well.

He used MS on Kakashi for two reasons:

1. To continue to pretend and make everyone think he's an evil guy. Similar to when he tsukuyomi'd part 1 Sasuke to put on a show for Kisame/Jiraiya.

2. He wanted to take him out quickly before more back up arrived.

3T Itachi clearly dominated that fight, he wouldn't necessarily neg diff with 3T, but Kakashi couldn't read his hand signs, and nearly got Ko'd by an exploding water clone.

Dominated what? Itachi got tricked by kakashi's water clone and kakashi protected kurenai from the exploding clone. The only ppl that got dominated were kurenai and asuma. Unlike itachi,kisame and kakashi they stood there dumbfounded not knowing what was going on. There's no reason itachi would risk his own eyesight if he didn't have to. He's showed time and time again(deidara,oro) that if it isn't necessary he won't use it.

Ot: the 3t team takes it. Kakashi dodged kakazu's masks while facing hidan and covering shikamaru and choji and only lost a jacket. We don't know what the water mask is capable of and if all five are out then the original would be dead by default. At max it can only be 4 at a time.

Pretty sure that excluding like specific types of chakra, all basic chakra is the same and it's not like someone's chakra determines their affinity or they wouldnt be able to use other ones.

While it is true that one can learn more than one element each person's chakra has a specific rotation and element.
If that were the case he wouldn't specifically want kakashi's heart to replace the lightning one that got destroyed.

3T Kakashi with War Arc stamina could potentially take this alone. Giving him an equally skilled 3T fighter to back him up makes this a relatively easy win.

Kakuzu starting with hearts out is a detriment to him in this match-up. You say that Kakashi and Itachi have "no knowledge" yet have Kakuzu with all his hearts out at the beginning of the match, essentially damaging his advantage of his opponents not knowing his abilities. With his hearts out, Kakuzu won't have a chance at blind-siding them when they think he is dead like he did to Rasenshuriken Arc Kakashi.

Kakashi and Itachi are faster than Kakuzu by a good margin, and both are capable of utilizing Kage Bunshin, diminishing Kakuzu's number advantage. The hearts have not been shown to be impressive when they are not overwhelming someone with their numbers; individually, they should not be a threat. They appeared a threat against Kakashi because not only was he worn out physically and exhausted but he was also outnumbered. He was dodging / countering elemental canons while initially holding off Hidan as well as keeping an eye out for Kakuzu himself.
