The one time Itachi put Bee in a genjutsu Bee broke out of it before the shuriken Itachi threw could reach him. With full intel Gyuki's going to be on the lookout for genjutsu, making it even less likely for Bee to give an opening through genjutsu.
Bee wins this handily due to his Sword Dance, Raiton enhancement on swords, and him being fast enough to dodge most of Itachi's ninjutsu, whilst having the option of partial transformations to tank what he can't dodge.
