Fire + Water - While Water is strong against Fire, it is a really good combianation since it will create steam that can blind and damage the opponent, not really evaporation.
Water + Earth - Yeah, Earth is strong against Water because it can absorb the water, but it can be used in many ways to make really useful combinations with Earth. Earth gives tangibility to it's combinations. Lava is tangible fire, Wind with debris is a more tangible wind, mud is a tangible water, etc etc. Water gives substance and fluidity, earth gives tangibility and strength. You can have water jutsus carry out debris and boulders, or guide your opponents/push them to traps.
Water + Lightning - Also really good to use in combinations, since water will conduct the lightning. For example, you use a large Water based technqiue and your opponent uses Earth to counter, since Earth is Strong against Water. But what he doesn't see/know is your next technique, which is Lightning based, hit and kill it is
Wind + Water - They don't really mix well togther, but it can be extremly useful to add more power and speed to your Water technique's by following it up with a Wind based technique. Increasing it's momentum and adding a more destructive power.
It's fun to play aroud with different kind of combinations when you got the time
