Orochi left Akatsuki after Itachi cut his hand, then Kisame was made Itachi's partner. Then they found Diedara to be Sasori's partner.

And i dont think it is Yahiko either because the real Akatsuki was formed after his death.

that was for orochimaru
all akatsuki members put their rings in different fingers. and the finger they put their rings is the same finger that they stand on gedo's finger
and the one that's empty, was the one that was reserved for the holder of the ring that orochimaru had.
since orochimaru left and took the ring with him they couldn't replace him and that finger was left empty

It's Zetsu, Zetsu counts as two people and he is the only one without a team mate. Deidara replaced Oro, but Oro took his ring with him.
