So, we know that the EMS is supposed to last forever without losing its sight. We also know that when someone uses Izanami and Izanagi, they go blind. This is more or less speculation... But do you think that an EMS can use these techniques without going blind? Which makes me wonder if...

I think you are right, that's when we will see Sakura's development as a character. I had a theory that she would join Sasuke once the war is over and help him, but I highly doubt she would betray the Leaf Village, so I think she would try to stop their fight in some way.
