one piece is an anime that you should see from the beginning, you may miss stuff like when luffy gets his first few crew members, some characters who you see in the beginning that will play apart in the story later on, and more

I can re-watch ONE PIECE from 1st episode anytime and how many times, because I never get bored of it. Like others said. Don't miss the canon arcs. You'll see how Luffy built up his reputation, power, group and everything from the zero to 100.
