Sage Mode doesn't exactly increase your reflexes, you're capable of sensing an upcoming attack and move accordingly. Somewhat the same as Sharingan.

Minato usually finishes battles by the time it would take him to enter sage mode. he may have had an imperfect version of it, but if he didn't use it vs 'madara' and the kyuubi, he wouldnt use it at all
