But I don't see how Orochimaru knowing Itachi's abilities would changebthe outcome.

Amaterasu & Tsukoyomi aren't things that can be easily countered,
even with knoledge. And Oro already had knoledge on Uchihas qhen he first
tried to get his body.

Itachi is just that bad of a mach-up for Orochimaru.
