Itachi would've died without sauske's help during the fight with kabuto... as u can see in the manga:

so basically even tho itachi is immortal in edo-state, he couldn't stop the edo tensei by himself.

Itachi was slow due to shielding Sasuke. We don't know how the fight would have turned out if they were alone.
