How is the Anime not canon

I never really understood this concept, I mean doesn't kishi work on the anime just as much as he works on the manga. If he does, then wouldn't that mean all the extra little things he adds in the anime because he couldn't fit them into the manga. For example the itachi and kisame sparring match?.
All i'm saying is if the dude works on the anime like he does the manga then it, should count. None the less can someone explain to me how the anime isn't canon?

^ This. Sure, the anime includes filler episodes, but everyone knows that's so the manga stays ahead by a good amount of chapters/episodes.

I am at least FAIRLY sure Kishi approves of the anime, I find it hard to believe that Kishi has nothing to do with the cartoon based off his story.

The English dub is completely not canon though, they add in lines that aren't even close to right.

You know, like in DBZ, the line about Kid Buu being the strongest Buu?
