How do we know that this is something and not just... nothing?
wtf?
Good question. However, if there wasn't something, then there would be nothing for you to even think about. xd

For your second one, identical twins are far apart if you think about it. Different tastes in things (fashion, food, etc.) and their personality is different. Do you really think they have the same amount of cells or the same number of hairs on their head? Their far from "identical"1. Something is the assumption that while there appears to be nothing, something can be.
2. Identical twins.
Nothing is an "empty" something
Ask -Logic-? he would probably tell you: ask Itachi xd
There can be two things of anything. It will simply take an inexplicable amount of time for the identical thing to come to fruition. For example, put over 100 monkeys in a room with computers in front of them. Eventually, one of these monkeys will produce a perfect manuscript of Hamlet. Assuming they have unlimited time.
