I don't think Itachi wanted to prevent Sasuke from seeing Tobi's face, I think he just wanted to get rid of Tobi that way.

That is not the reason why itachi did that, itachi didnt want sasuke to have any connection to tobi at all. otherwise he would know the truth about that night.
