Kabuto prepared everything he needed in order to fight an Uchiha, if he could prepare against Kakuzu he would definitly win - no edo -
Without preparation or knowledge of Kakuzu and his ability it would probably be pretty hard for Kabuto - with Kakuzu's extreme strength and ability to just reattatch body parts/use so many different chakra abilities etc it would be harder BUT Kabuto still has so many tricks he hasnt shown us yet - and even without these new tricks he would still most likely be able to destroy Kakuzu

Without edo tensei, probably kakuzu high dif. Kabuto's major techs so far seem to revolve around crippling the enemy, which won't work against kakuzu's hearts. Those things proved that they can stay active when he's stone dead. Also if kabuto has suigetsu's liquification then he's probably also weak to lightning.

kabuto is trying to capture sasuke, if he wanted to kill it would be a very different fight

i say kabuto low difficulty, assuming he has no info on kakuzu he has the sage awareness to dodge any of kakuzu's techniques, the speed to out maneuver him physically, and the jutsu's to overwhelm him
