Why didn't Kabuto take control of Itachi while he had the chance?

I know Kabuto is one of the most intelligent characters in the manga so it kind of pisses me off why he didn't instead of cutting Itachi in half he didn't put the kunai in his skull thus taking control of him again it dosen't seem like Kabuto's style to do useless things like slicing an edo when he knows they will just regenerate.

Probably because he knew that he couldn't tag Itachi with a seal even with a surprise attack on his side. Slicing him (thus rendering him useless), might give him better chances.

One does not simply take control of Itachi.

I think he knows what's hes doing.. and if he re controls itachi..then itachi has no more anything to do about it.

When did Kabuto have the chance?

Sasuke protected Itachi that one time, and I'm guessing Kabuto didn't have enough time to insert the formula or whatever it is at the time of his surprise attack, which is why Kabuto sliced him in half instead.

Kabuto was only a few inches away from his skull how hard would it be to put a kunai from his skull?

Kabuto didn't control itachi and overwrite his "control" for 1 reason.
Itachi did not will it to be...Itachi has already cast Izanami. What has happened so far, was fated due to Izanami.

Remember that he was using chakra scalpels too for extended range. I mean think about it I would rather face somebody trying to stab my head with a knife than slash my body with a sword xD (in terms of getting hit or not).

Kabuto didn't use a kunai. That's why.
