Gaara's ultimate defense is in good shape even without shukaku.People need to stop underestimating it.Let me break it down to you how this will go. 
Gaara is the youngest kage yet.It means his talent level is really high even though he is young.
His defense
Gaara's defense is really solid.Especially when it's made with the sand in his gourd (which is more chakra molded).Deidara found it difficult to break through it even with his detonating clay(C3/C4).He broke through it by mixing his clay bombs in sand and getting inside the defense.He also cracked a hole when Gaara tried to cover the small whole in the defense which he used to see through.So Gaara's defense is solid.It also held the collapsed ceiling in the kage summit.
The speed of the defense is really quick.We saw it is as fast enough to cover Gaara from amaterasu.So amaterasu won't work well against Gaara.There is another version of his defence called "Ultimately Hard Absolute Defence: Shield of Shukaku" which is more powerful than the before.So the susanoo attacks(arrow etc.) are defeat-able.His defense will stop it.
Countering and defeating Sasuke
Here's what i think Gaara will do to susanoo.
1.He will use his "Prison Sand Burial" and will sink Susanoo.
2.He will trap susanoo in his "Desert Layered Imperial Funeral " or "Sand Binding Prison" and will crush it.
3.He will use "Sand Waterfall Imperial Funeral" or "Sand Waterfall Funeral" or "Quicksand Waterfall Flow" to crush it.
4.He can also use his other techs like "Sand Drizzle","Sand Bullet","Sand Binding Coffin","Sand Binding Prison","Sand Hail","Successive Shots: Sand Drizzle" to counter Sasuke's jutsus and damage susanoo.
Note:The pressure made from his sand is really high.It also broke Kimmimaro's bones which are really dense.
Gaara is always covered in a sand armor.So he can take on some simple damages done by tai-jutsus and ninjutsus.Maybe amaterasu cause,if he get caught he can remove his armor to avoid burning his body.Gaara's wind style jutsus like "Wind Release: Infinite Sand Cloud Great Breakthrough" will be enough to counter sasuke's lightning style jutsus.He also got the 'gold dust' as well.Gaara also can be in air using his 'Desert Suspension' if Sasuke summons his hawk.
