-inocent and respectfull(prior uchiha massacre)
-vindictive and disrespectfull but no murder intent(post uchiha massacre)
*killing itachi,serving konoha
-vindictive,disrespectfull,total lack of empathy(post tobi manipulation/convinient "truth"about itachi )
*killing konoha
and itachi as

-traumatized by the 3rd ninja war he was turned into a passifist...
-discovery of curse of hatred and will of fire--»will of fire follower
-starts his life as a double spy(uchiha on konoha,leaking back to konoha)
-assumes a fake persona
-murders the uchiha clan(to save konoha)
-assumes himself as a akatsuki member(unofficialy spys on them leaking information to konoha)

sasuke is a protagonist turned antagonist

itachi is more of an anti-hero,has his methood was not the best(extermination of the uchiha)yet his intentions wore ment for the best...

plus sasuke decided to be an antagonist by himself
itachi posed as one...

for me there was no shift on their personalities as itachi posed(has in faked)
