After seeing Minato in action i'm inclined to pick him, but then I remember Jiraiya has a much larger arsenal of abilities and so that could perhaps swing the match in his favour.

Minsto has FTG as an advantage to Jiraiya movements in general and Sage Mode. I'm not saying Minato will win with ease, I'm just saying he would have some difficulties because of Jiriaya's experience.

Doesn't start out with it, but does use in at some point during the battle. Just assume that MInato is occupied by something whilst Jiraiya gathers in nature energy.

Thats the thing tho, Geniuses like Minato and Itachi don't let the fight last for 6 minutes, especially itachi cuz of his little chakra

And I don't think the fastest shinobi would let his sensei use his most dangerous technique
