what will happen if kabuto summon jiraya when he facing with itachi?

Yeah, cause pain kept Jiraiya blood on his weapons? Pain killed others with those weapons, Jiraiyas DNA is no longer on his weapons. And so he is going to search the whole ninja world to find the slightest bit of DNA of Jiraiya... Yeah, we can see that happening.

Jiraiya was the hidden leafs strongest ninja and Itachi's alliances where still with the hidden leaf. With Jiraiya dead, Naruto doesn't learn rasengan, no intel on Pain and no Tsunade. The hidden leaf would be destroyed, one of the things Itachi doesn't want to happen.

He did actually state that he might be able to get someof Jiraiyas DNA form Pains weapons so it is possible.

He used it once against Kakashi didn't he. For me i would say it would be a pretty powerful fight.... EPIC !!! But i would say Jiraya would win if it was in a one on one fight. ( That is my opinion )
But still now if he is revived by kabuto he is missing an arm and he was injured badly when he died therefore it's like a paralyized man vs a kung fu master.xd

Aaaahhhhh yes i forgot about sasuke but i am pretty sure he would had nuf chakra to fight a little and plus kisame was there. We truly don't know if itachi actually feared him or not, but i still say jiraya would win in a one on one fight
