Bcoz they have gotta focus hard and use most muscles of their eyes imo....

The usage of the doujutsu causes a strain to the nerves of the eye that it either causes larger, visible vessels like the hyuuga or blood leakage in the case of the Uchiha.

These are just common happenings,..

When someone activates byakugan,thier nerves become visible

And when someone activates mangekyuo sharingan
(amaterasu or susano'o as I recall,..)
there eyes start bleeding,..

I guess that is just art-work,nothing more nothing less,
Just to make them look unique,get more attention,and show the side-effects/damage aquired by using those...

Amaterasu strains the area surrounding the eye to the point of bleeding(supposedly). And when the Byakugan is activated the veins(?) around the eye brings more blood to support it I think.
